Popcorn Powder's Mexican Lasagna is a super quick & easy way to spice up your dinner time! Made with corn or flour tortillas, beans and corn, this recipe may seem simple, but it's taste definitely isn't! With our homemade enchilada sauce, you can also take up the heat as much as or as little you'd like!
Chipotle Cheddar Mexican Lasagna Ingredients
Homemade Enchilada Sauce:
- 1/4 cup olive or avocado oil
- 1 (8 oz) can tomato sauce
- 1 cup broth or water
- 2 tablespoons flour
- 1-2 tablespoons chipotle powder (depending on spice level)
- 1 tablespoon chili powder
- 1 tablespoon Popcorn Powder's Chipotle Cheddar topping
- 1 teaspoon cumin
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
Chipotle Cheddar Mexican Lasagna:
- 6-12 tortillas (corn or flour)
- 2 cans black beans (drained)
- 1 can refried beans
- 1 cup frozen corn
- 1 cup shredded jack cheese
- 1/2 cup crushed tortilla chips
- 1 tablespoon Popcorn Powder's Chipotle Cheddar topping
Chipotle Cheddar Mexican Lasagna Directions
Homemade Enchilada Sauce:
- In a saucepan, add the oil, tomato sauce, broth and water and heat over low.
- Add the flour and mix well.
- Add remaining spices and continue to stir.
- Allow to sit on low 5-10 minutes until warm
Chipotle Cheddar Mexican Lasagna:
- Preheat oven to 375.
- In a saucepan, mix black beans, refried beans and corn until warm.
- Coat the bottom of a large 9 x 13 casserole dish with enchilada sauce.
- Place 1 layer of tortillas on the bottom of the dish and top with 1/2 of the bean/corn mixture.
- Sprinkle with jack cheese and Chipotle Cheddar topping.
- Add a second layer of tortillas and repeat step 5.
- Pour enchilada sauce over lasagna to cover.
- Sprinkle with crushed tortilla chips, and remaining jack cheese and Chipotle Cheddar topping.
- Bake 15 minutes or until golden brown and bubbling.
