Chipotle Cheddar Cornbread

Cornbread is the perfect addition to any meal! It's fluffy, tangy and with our addition of Popcorn Powder's Chipotle Cheddar topping, you'll love the extra little kick you'll get!

Chipotle Cheddar Cornbread Ingredients:

  • 1 cup cornmeal
  • 1/2 cup all purpose flour
  • 1/4 cup Chipotle Cheddar topping
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/2 cup melted unsalted butter
  • 2 eggs at room temperature
  • 2 tablespoons maple syrup
  • 1 1/2 cups buttermilk
  • 1 7 oz can drained corn or 7 oz frozen corn defrosted

Chipotle Cheddar Cornbread Directions:

  1. Preheat oven to 350 degrees
  2. Lightly grease an 8" x 8" baking dish
  3. Whisk together cornmeal, all purpose flour, Popcorn Powder's Chipotle Cheddar topping, baking powder, baking soda & kosher salt
  4. In a separate bowl, add melted butter, then whisk in eggs
  5. Add maple syrup, buttermilk and stir
  6. Add wet ingredients to dry and mix until combined
  7. Gently stir in corn
  8. Pour into baking dish and bake for 30 - 40 minutes or until golden brown on top
